‘Salut’ to Saturday!

Try this chic, easy, Italian cocktail and appetizer pairing! Found all over Italy, the Spritz is a classic Venetian cocktail that pairs well with all sorts of cicheti – small savoury mouthfuls, like tramezzini – tiny triangular sandwiches (See that recipe below the Spritz). You’ll have your friends asking, “When did you get back from Italy??”

3 oz. prosecco
1½ oz. bitter aperitif liqueur, such as Aperol or Campari
1½ oz. soda water
Fresh raspberries, strawberries or traditional orange slice to garnish

INGREDIENTS (serves 4)
12 slices white sandwich bread
3/4 cup mayonnaise
Kosher salt and freshly ground black pepper, to taste
4 thinly sliced figs
6 oz. thinly sliced prosciutto
2 oz. thinly shaved parmesan
1 cup baby arugula leaves

Remove crusts from bread and spread 1 tbsp. mayonnaise over each slice; season with salt and pepper. Layer prosciutto, parmesan, figs, and arugula over 6 slices. Top each with a slice of bread; halve sandwiches diagonally.
